Crispy chicken stir fry

ingredients (serves 2)
2 chicken breast
2 tbls cornflower
1 yellow pepper
1 red pepper
1 white onion
150g bean sprouts
1 spring onion
3 cloves garlic
3tbls soy sauce
1tbls Shaoxing vinegar
2tbls sherry
1tbls chilli flakes (to taste)
black and white sesame seeds


1. coat the chicken pieces evenly in a mixing bowl with cornflour. This will give a crispy texture to the chicken when stir-fried.

2. Slice the yellow pepper, red peppers and white onion, and prepare the bean sprouts. Keep them ready for stir-frying.

3. Heat a generous amount of vegetable oil in a skillet or wok over medium-high heat. Once hot, add the coated chicken pieces and fry until golden brown and crispy. Remove the chicken from the oil and drain on paper towels.

4. leave a tablespoon of oil in the same skillet and add the sliced onion and peppers. Stir-fry until softened, then add the grated garlic.

5. Add the bean sprouts, soy sauce, sherry, Shaoxing vinegar, and chilli flakes. Stir-fry for a few more minutes until everything is well coated and heated. Return the crispy chicken to the skillet with the stir-fried vegetables.

6. Season with salt and pepper to taste. Stir everything together until well combined.

7. Serve your Crispy Chicken Stir-Fry hot. Garnish with sesame seeds and spring onions.
