french onion soup

ingredients (serves 4)

4 medium onions

3 garlic cloves 

1 tsp sugar

1 tbls plain flower

1 tbls sunflower oil

150 ml white wine 

50g butter

1L strong beef stock

full baguette sliced

gruyere grated 

Add tyme and rosemary for added flovor


1. slice your onions length way (to make long strips) and finely chop garlic in a pan heat up your oil and butter once butter is melted add onions.

2. reduce heat and add in your sugar, once onions are dark brown and caramelised (this may take up to 30 minutes)add in your garlic and flower then cook out the flower.

3. turn up your heat and add the white wine to deglaze the bottom of the pan then add all of your hot beef stock cover the pan on medium heat and allow to simmer for 15 minutes.

4. once soup is ready place in an oven safe bowl and add baguette with gruyere on top (add some garlic granules for added flavour) then toast under grill till cheese is golden and serve
