calamari with tzatziki

ingredients (serves 2)

for calamari:

1 squid tube (de skind and sliced)

batter

self raising flower

for tzatziki:

1/2 a cucumber

mint

1/2 a lemon juiced

250g greek style yogurt

1 clove of crushed garlic

Add tyme and rosemary for added flovor

1. Start by removing the skin away from the calamari and cutting into rings you should get around 8-10 rings from one squid tube, next place your squid in flower and then the batter of your choice once batter deep fry the squid in a pan or deep fat fryer at 180c (we recommend a veg or rapeseed oil) cook for 2-4 minutes or until golden take out and lightly season with flaky salt (if you don't wish to deep fy them you could panic then and place them in an air fryer).

2.For the tzatziki great your cucumber and place in a siv lightly season to help remove all moisture, in a separate bowl combine your chopped mint, crushed garlic, lemon juice and yogurt squeeze the cucumber to remove the last of the moisture and mix it in with the rest of your tzatziki season to taste

3. To surve place tzatziki in pot and add a wedge of lemon to your calamari
