Sweet potato & butternut squash soup

delicious butternut squash soup

ingredients (serves 4)

250g sweet potato, peeled

1/2 butternut squash, peeled and deseeded

1 tbs veg oil

2 garlic cloves

1 onion

500 ml veg stock

75 ml white wine

1 tsp nutmeg

50 ml cream

Served nicely with garlic croutons


1. Pre heat oven to 180c and start roasting off the sweet potato & butternut squash (may take up to 40 minutes) until golden and caramelised

2. In a pan starts frying off the onions halfway through adding in your garlic till the onions are golden then deglaze the pan with white wine and add in your now ready sweet potato & butternut squash and cover with veg stock

3. Bring stock to boil then blitz with your stick blender once soup is a puree add your cream, nutmeg and season to taste serve with a dash of cream on top
