potato leek soup

ingredients (serves 4)

1tbls veg oil

350g white potatoes (washed and peeled)

1 onion diced

2 garlic cloves

1 leek (peel off top green parts and wash)

50g butter

1l chicken/veg stock

150g cream

1 bay leaf

Finnish with chives


1. start by softening off your onions in your veg oil adding your garlic mid way through, once golden add your butter and and your leeks frying until soft

2. add in your chopped potatoes, stock and bay leaf then bring to boil, cook until potatoes are soft once potatoes are soft add in your cream and blitze to a puree

3. to serve chop us some chives and sprinkle on top
