mushroom soup

ingredients (serves 4)

1tbls veg oil

1 onion, diced

3-4 cloves garlic

100g butter

500g mushrooms (chestnut or button mushrooms)

1l chicken/veg stock

150ml cream

75ml white wine

serve with fresh parsley and garlic croutons


1. starts by frying up your onions adding your garlic part way through once golden deglaze with your white wine, one wine is reduced add in your butter and mushrooms and season with salt (helps release water to caromalize niceley)

2. one mushrooms are nicely caramelised add in your stock and bring to a boil, once boiled mushrooms should be soft pour in your cream and blitz up turning into a puree, season to taste

3.finesh of with a sprinkling of parsley to take away the harshness of the garlic
