classic italian lasagna

ingredients (serves 4)

for bolognese:

1 onion, diced

2 cloves garlic

500g beef mince 

2tbls origano

2tbls basil

2 bayleaf

400g chopped tomatos

300ml beef stock

1tbls tomato puree

100ml red wine 

for mornay sauce:

2tbls plain flower

2tbls butter (not spread)

350ml milk

75g cheddar


pack of lasagna sheets

sprinkle of parmesan/mozzarella (to serve)


Serves well with salad and cherry tomatoes or garlic bread


1.For your bolognese start by frying off your chopped onion and garlic adding the garlic mid way through then once golden and soft add in your minced beef and cook until the meat is brown and caromilized pouring out any liquid that comes out the beef to help it caromalize 

2.Add in your tomato puree and fry off for 2 minutes then add in your red wine to deglaze the pan 

3. Take your chopped tomato and blitz up slightly add it into your pan with your beef stock,origano,basil and bay leaf bring to a boil then simmer for a minimum of 45 minutes stiring regularly 

4. once bolognese has reduced season to taste adding 1-2 tbls of sugar take out the acidity of the tomatos

5.To make your mornays sauce (cheese sauce) start of by melting butter and mixing in flower to make a roux, start adding in your milk 50ml at a time letting the milk heat then wishing in to stop lumps forming

6. When all the milk is mixed in you should get a smooth thickened sauce to finish mix in your cheese and once all melted take of heat

7.Its now time to assemble your lasagna grab your square baking dish and start off with a thin layer of mornays sauce then cover with pasta sheets then for the next four layers do bolognese topped with pasta sheets for the top layer add your mornays sauce and sprinkle with mozzarella & parmesan

8.Cover the lasagna with greaseproof paper then tinfoil and bake for 20 minutes, then remove tinfoil and greaseproof paper and bake again for another 30 minutes or until cheese is golden and caromalized

9.Take the lasagna out of the oven and leave to rest for 10 minutes, to serve chop some chives and sprinkle over the lasagna
