cauliflower roasted chestnut soup

ingredients (serves 4)

1/2 tbls veg oil

1 onion

2 cloves garlic

1 cauliflower chopped

800ml veg stock

150ml cream

75 ml white wine

200g vacuum packed chesnuts

nicely served with Parmesan


1.dice your onions and garlic and fry off in oil adding your garlic midway through the cooking of the onions once soft and caromalized deglaze the pan with white wine, and adding in your chopped cauliflower (leafs and all) with your chestnuts and stock boil for 15-20 minutes or untill soft

2. add your cream then blitz the soup into a puree and season to taste
