broccoli and blue cheese soup

ingredients (serves 4)

1 tbls veg oil

1 onion

2 garlic

2 broccoli heads

140g stilton/ blue cheese

800 ml veg stock

50g butter

50ml white wine

use the broccoli stalk for added flavour just peel the outside of the stalk


1. start by frying off your diced onion oil and butter adding your garlic half way through, once onion is golden and caramelised deglaze the pan with your white wine

2. add in your broccoli with your stock and bring to a boil cook for 10-20 minuets till your broccoli stalk is soft, once soft add in your stilton then blitz to a puree and season to taste
